1 orange
1 lemon
Flaky sea salt
Freshly ground pepper
Optional: fresh parsley, chopped
Instructions:
Combine sliced fennel, celery, and crushed olives in a large bowl
Zest the lemon and orange directly over the vegetables
Squeeze half the orange and half the lemon over the mixture
Add vinegar, olive oil, and about 1 teaspoon flaky sea salt
Toss and let sit for 3 minutes to allow flavors to meld
Season with pepper and additional salt to taste
Add fresh parsley if desired
