The Only Summer Dressing You Need

School is out, so simplicity is calling! This lemon-tahini dressing is exactly what you need to easily elevate your summer meals.

You can use it on almost anything - grilled or roasted vegetables, proteins, salads, etc. etc. One particularly good idea is to put it on a Greek salad using summer tomatoes, cucumbers, and plenty of fresh parsley or dill. The tahini's flavor works well with these Mediterranean ingredients, creating a salad that feels substantial. We also have been found dipping our grilled chicken in this one or even steak.

This dressing keeps well in the refrigerator for up to a week and travels easily to gatherings. Make a batch early in the week, and you have an instant solution for quick lunches, side dishes, or the perfect hostess gift. Having this versatile, homemade dressing on hand makes lots of things simpler!

Creamy Lemon-Tahini Summer Salad Dressing

Ingredients

  • 3 tablespoons tahini (sesame seed paste)

  • 2 tablespoons fresh lemon juice

  • 1 tablespoon olive oil

  • 1 teaspoon Dijon mustard

  • 1 small garlic clove, minced

  • 2-3 tablespoons warm water

  • 1 teaspoon honey or maple syrup

  • Salt and freshly ground black pepper to taste

  • Optional: 1 tablespoon fresh herbs (basil, parsley, or chives)

Instructions

  1. In a small bowl, whisk together tahini, lemon juice, and Dijon mustard until smooth.

  2. Whisk in the minced garlic and honey/maple syrup.

  3. Slowly drizzle in the olive oil while whisking. Then add warm water, one tablespoon at a time, until you reach your desired consistency. The dressing should coat the back of a spoon but still pour easily.

  4. Add salt and pepper to taste. Start with 1/4 teaspoon salt and adjust from there.

  5. If using herbs, fold them in at the end.

Tips

  • Make ahead: This dressing actually improves after sitting for 30 minutes as the flavors meld

  • Storage: Keeps in the fridge for up to one week. Whisk before using if it separates

  • Consistency: Add more water if it thickens too much when chilled

  • Flavor variations: Try lime juice instead of lemon, or add a pinch of cumin for warmth
